Product Review Andalou Naturals

Hey everyone!
I'm so happy I got to review this California based company. This is not an advert. 
I love all natural beauty lines that are food inspired.  It's something I'm really passionate about. I wanted to give my honest opinion on a few of these products. I've been using Andalou Naturals for one month now, to ensure I give the best review possible. 




 I am in LOVE with the Avo Cocoa Skin Food Mask. It has a cooling sensation when applied, and doesn't dry it into a crumbly mess. It was really easy to remove too!

It contains Apple Stem Cell Cultures, Cocoa, and Avocado Oil. It is loaded with antioxidants and repairs damaged skin.


It looks and smells like dark chocolate mousse. I was tempted to taste it. You need a very small amount, and my skin felt soft afterwards. Was not oily at all!


I was also in love with their Lemon Sugar Facial Scrub. It was not astringent, It lathers slightly, and it is impossible to over exfoliate because the sugar dissolves after a minute or two.

Contains Meyer lemon extract, organic cane sugar, Manuka honey, and the same plant stem cell complex as the Cocoa Skin Food.



It smells like lemon meringue pie, but wasn't as yummy smelling as the chocolate, only because the chocolate mask smelled exactly like dessert. This you could tell was a skin product. No big deal though!

I used it every other day at night. Since it isn't a strong scrub, it's fine to use more than twice a week.

My skin looked brighter and it didn't feel dried out like with some scrubs, where you feel like you have to suck up serum right after.




I used the Grapefruit + C Exfoliating Peel.

This is a gommage exfoliant, which is an exfoliant that is rubbed off or peeled off after it dries.

I was disappointed in this product honestly. It smells amazing, but it did nothing for my skin. I read the directions carefully the second time I tried it. It took forever to dry, (even stood in front of a fan).

I am a fan of peels that peel off in big pieces, since they take off oil and surface dirt. This stuff I had to wash off with water and it was a bit hard since it was slippery. No super skin feeling.



I also loved their face washes! The Apricot Probiotic Cleansing Milk smells like peach oatmeal with milk. The concentrates and serums were good, but in my opinion not great. I am very picky about serums and concentrates. I would recommend them since they are affordable, and not everyone wants to spend $40 + on a serum. So for something under $20, GREAT compared to drugstore products.

Over all, it was really fun to try a new line of products that are inspired by food. That is what it's all about for me. I appreciate their honesty by showing what percentage of the formulas contain certified organic ingredients. This isn't required from skincare companies. They could have simply stated they were organic products.

I will continue to use the sugar scrub and chocolate mask as a part of my regimen now. As well as the probiotic face wash, since it's mild, and great for a mild morning wash. (I don't like harshly washing my face first thing in the morning).

They support sustainable trade, and DO NOT TEST ON ANIMALS!

Couscous the right way

Hey guys! Quick post today! I notice on the back of a lot of couscous boxes they suggest you boil the heck out of these little balls of goodness. Please don't. There is actually a proper way of cooking couscous that doesn't require you putting your couscous into boiling water. It is virtually foolproof, and you can set it and walk away. No need to hover over the stove with this stuff!




1. Place couscous in a heat safe dish or even a bread pan like I did! Pan should not be filled to the top. We want to give our couscous some room to bloom! 










2. Add a good quality of olive oil. Just enough to coat the couscous.
3. Combine gently, and set aside for a few minutes. This prevents it from not sticking together. 
4. Heat up stock, seasoned broth, or water to a simmer.
5. Add to couscous and cover with foil. About 1/4 more water than couscous.
6. Set aside for about half an hour.





You will be left with perfectly cooked, non sticky couscous.

Add whatever you'd like. Fresh herbs, toasted nuts, a red wine reduction. Get creative!

Couscous should maintain it's shape and have a wonderful, delicate texture. It should not be treated like pasta, and traditionally, it isn't!

Don't forget to adjust your seasoning if needed!

Food Trends

Hey guys! I thought it would be fun to share with you a few trends this year that I am seeing become more and more popularized. Just like the fashion world, the culinary world has its trends. It is also important to keep dishes current, fresh, and exciting. Notice how popular macaroons have been this year?

I also love timeless dishes that are often left in their true and original form, with a little modern element added. Best comparison would be a Coco Chanel's vision of the 'little black dress'. It is timeless, and slightly evolves, while maintaining it's spirit.

Food is often compared to a lot of things that are considered artistic, like music & fashion. So here are a few trends I have noticed popping up this year:

Spherification is molecular gastronomy 101. The process requires you to know a specific pH balance of an ingredient. Depending on the acidity, you add the needed amount of sodium alginate. This mixture is usually placed in a syringe, and carefully dropped into a calcium chloride solution. Now you have gorgeous spheres that burst into your mouth. It is really fun to do, and is a conversation starter. It has become more and more popular within the last year or so.


Another way to spherify your food without alginates is by taking powdered agar (found in Asian markets), combining with an acidic compound, and dropping it into a neutral oil (canola). The texture is much different, and it is a process that takes a little know how to avoid a grainy texture. I used a wild blueberry reduction using the agar method over a coconut and ginger spiked mousse.

Tapioca Maltodextrin is super simple to use. It is a starch that turns fats into a powdered form. When you taste the powder, it dissolves and turns into a velvety texture. You just have to know how much to use. Too much and your powder turns into a gummy mess. Peanut butter, olive oil, and coconut are very popular. To infuse flavors, you may take a previously prepared infused oil, or blend and strain a clarified butter with desired flavor component. It's a really fun finished product.

 Cake Pops are a huge craze, and now, pie pops are starting to take notice. I think they're really cute. You can purchase a pie pop machine to make them, or do it manually. I'd love to make some little pop tarts!


Rainbow Confections: If you have a tumblr account, you have seen more than 200 pictures of rainbow desserts. I love the idea. it's so fun. I made some rainbow meringues with the kids a while back. Recipe here: It was such a fun project with my kids. I appreciate the rainbow craze because it does take some time and effort to make the confections come to life. I always appreciate anyone's time valued in the kitchen. It shows a lot of heart and creativity.

Acne Spot Treatment with Matcha Tea

Hey guys! I'm  in love with green tea & skin health. As you may know by now from previous posts, green tea contains antibacterial agents that keep the skin looking squeaky clean.

This doesn't mean you'll never break out again. Unfortunately, stress and hormones play a huge role in breakouts. I'm so busy most days I have a day planner app on my phone to keep me on top of deadlines, the kids' school projects, and to remember to pick up the dry cleaning. I've also noticed a change in my body. I'm close to entering my 30's, and I notice I break out more before I start my cycle. TMI? You're over it! I'm a woman, and you may be one.

I started doing research on matcha tea. I am quite fond of this stuff, and even though it is a bit pricey, a tiny bit goes a long way. Trust me, I learned this the hard way when I accidentally made a mud smoothie instead of a nice matcha tea.

It's loaded with even more antioxidants and yummy goodness for your body and skin. This is because during processing, it is not exposed to oxygen. Simply take a tiny amount of matcha tea, and form a paste using water, or a blend of raw apple cider vinegar and water.

Using a clean, lip brush, dab on a small amount and leave on until it drys. Matcha also makes an amazing mask, but I will be honest, it's a bit messy.

For cost practicality, I suggest using it for spot treatment, but don't be afraid to indulge.

Marsala Panzanella Inspired Salad

Hey Everybody!

Panzanella salad is traditionally made by soaking cubes of bread in fresh tomatoes, and traditionally eaten in Italy in early summer. I gave it my own spin, and lightened it up by not making it totally bread based, and making it fall and spring friendly using fresh Gala apples and shaved fennel.

Panzanella, unlike croutons, are not entirely cooked. they have a slightly crispy exterior, while maintaining their softness in the center.



Ingredients:
Cubed bread (I used French bread)
Gala Apples
Fennel
Mixed Greens
Pine Nuts
Marsala Wine
Olive Oil
Honey
Sea Salt

1. Sear cubed bread in seasoned olive oil (meaning adding a little salt to olive oil) on medium heat until caramelized (golden).
2. In another saucepan add Marsala wine. Turn on to medium heat, and reduce in half.
3. Kill heat, and add in a touch of honey. Whisk until combined.
4. Strain, and set aside until cool. (If you dress your salad now, your greens will wilt extremely fast).
5. Toast pine nuts on medium heat in sauce pan for about a minute. Remove from pan immediately.

We want to release the natural oils in the nuts, which will elevate their flavor and texture. If you leave them in the pan, they'll burn! 

6. Using a mandolin, or the tip of your sharp, chef's knife, thinly shave the fennel bulb. Cut it against the grain. If you don't, you will get an extremely fibrous texture that will be impossible to chew.


7. Save your apple slicing for the last step. You wouldn't want them to oxidize! Cut the top of your apple off, then cut apple in half. Place flat surface on cutting board. Starting from the bottom, (I start from bottom left since I'm a lefty), carefully slice from the front to back. Make sure your control hand (hand you don't cut with) is stable, fingers tucked in, and away from your knife while holding down your apple.


Toss, or compose your salad to your liking! Don't forget to dip your bread into some of that leftover Marsala reduction.

Candied Yamtini with Pinnacle Marshmallow Vodka


Hey everyone! I have another super fun recipe using Pinnacle Vodka. Since we are now in autumn (see you next year summer), I thought it would be great to prepare for autumn by offering a fun and super simple recipe, balanced in flavor!



Ingredients:
2 parts Pinnacle Marshmallow Vodka
1/2 part Candied yam syrup/liquid (from homemade candied yams)
1 part White chocolate liquor
For garnish:
A little honey
Shortbread cookies




1. After making your candied yams, take some of the syrup/liquid, and strain.
2. Add Pinnacle Marshmallow, syrup, and white chocolate liquor to a cocktail shaker. You may drink warm or chilled. Both are enjoyable. 
3. Lightly apply honey to the rim of your martini glass. I used crushed shortbread cookie for garnish. Try gingerbread cookies too!
4. Enjoy!

This cocktail is not too sweet, nor rich. It offers an essence, or familiarity of candied yams, without losing it's dignity as a cocktail. You really taste the marshmallow too! It's  a really fun recipe to keep in your archives for fall festivities!  Enjoy, and please drink responsibly! (adults only).

Caramel Macchiato

 If you do not have an espresso machine, you may use your favorite coffee. Here are the hot and cold versions.

Ingredients:
Espresso (or favorite coffee)
Milk
 Heavy Cream for Hot
Caramel (homemade or store bought)
Vanilla Syrup (sub with confectioner's sugar & vanilla extract)

Cold Macchiato: 
Drizzle a thin layer of caramel at the bottom of your cup
Add ice
Combine milk & vanilla syrup (sold in coffee section at grocer)
Carefully add espresso or coffee. Make sure it is not hot, or your glass can break! NO!!!

Hot Macchiato:
Heat milk in a saucepan. Do not heat up milk and espresso at the same time, or it may separate unless you're using an espresso machine.

Combine and add to your coffee mug.

If you do not have an espresso machine, you can get a little of that "foam" on top by taking heavy whipping cream, and ice, and adding it into a cocktail shaker for about 30 seconds. You will have a faux foam. Do not over shake or you'll get clumps.
The faux foam will gently set on top of your hot coffee, and it will warm up the faux foam.
Drizzle with caramel.

So enjoy your macchiato, or mockiato (I went there. Don't get crazy!)

Orange Blossom Chili Glazed Tofu Hush Puppies with Cilantro Cashew Pesto

Hey Everyone! I have a really simple recipe to transform tofu. Hush puppies are a cornmeal fried sphere often accompanying cat fish. Though I am only using cornmeal or semolina for the exterior of this recipe, we're going to call it a hush puppy. Clearing the air for the politically correct bored guys out there.
Fishing as a kid, I was in charge of scaling, and gutting. I was never a huge seafood fan, I just wanted the hush puppies. The plain ones too! I have a fun vegetarian friendly recipe using tofu for "hush puppies". I glazed them with an orange blossom chili, and topped them onto a cilantro cashew pesto.  Very simple, and fun dish to serve as an appetizer, topped with stir fry veggies. Fun Asian vibe.

Ingredients:
14 oz firm tofu (not extra firm)
6 oz All Purpose flour
3 eggs
Semolina flour or Cornmeal
Orange blossom water (Asian market/Ethnic food section at grocer)
Sugar
Serrano chili
Kosher salt

In this recipe, it's all about the technique. I tried defrosting in different variations in order to get the right consistency, since defrosting plays a huge factor with tofu. Yes, freeze and defrost tofu. This way, it expands, and when you drain it, you'll have an easier time expelling that water, which will allow your tofu to absorb flavor more efficiently, and maintain a non rubbery texture

1. Defrost tofu overnight in fridge. Do not nuke it in microwave unless you want rubber balls for dinner.
2. Gently expel water from tofu. Press down and gently squeeze. When most water is expelled, place tofu on a lined plate with paper towels. Place a plate on top of tofu, with added weight, and let the rest of the water gently escape.
3. Take room temperature tofu, flour, salt to taste, and room temp eggs, combine.
4. Shape into golf ball sized bites.  Roll onto semonlina or cornmeal.
5. Set in freezer. YES! If you fry them now, they're going to fall apart. Chill for about 20 minutes to set up
6. In a large, always deep pot, oil should be around 350-375. If you do not have a thermometer, no problem, test out a tofu ball.
7. Deep fry for about 4-5 minutes. Tofu balls should be golden brown, and crisp.
8. Place on paper towel lined platter/plate.

Orange Blossom Chili Glaze

1.Take your orange blossom water, heat up in sauce pan.
2.Score serrano pepper (cut little marks into it) This will help infuse heat.
3.Heat and reduce
4. Add equal part sugar.
5.Cook until dissolved.
6. Kill heat.
7. Baste Fried Tofu "Hush Puppies"

Cilantro Cashew Pesto 

Cilantro
Roasted Cashews
Peanut Oil  (Be sure guests do not have a peanut allergy)
Minced shallots
Kosher salt
Kaffir lime

1. Blanch cilantro for 5 seconds in boiling water.
2. Transfer to iced water to stop cooking
3. In food processor, pulse cilantro, minced shallots, roasted cashews
4. Season with salt and kaffir lime (regular lime is fine to use if you cannot find kaffir)
5. Drizzle in peanut oil until all ingredients are combined into a nice pesto.

There you go! A few components to make a really memorable snack, or meal. Have fun with the flavor combinations, just remember that techniques are significant. Recipes, guidelines! If you don't like cilantro, use another herb, or a combination of some.

Sugar Waffles with Mascarpone and Marsala

Do you guys ever make waffles and they look a little pale? Leave them in too long and they burn, or your waffle iron is a communist and doesn't let you control your timing or temp? (okay ignore that).

Instead of buying specialty sugar for sugar waffles, called pearl sugar, which is broken down from refined sugar blocks, and is the left over sediments when sugar has been granulated, I have a solution to get a candied, sweet waffle.

Why can't I just add extra sugar? Pearl sugar is able to sustain higher temperatures, without burning. granulated sugar caramelizes too quickly in waffle irons, which results in the obvious. Problem is, pearl sugar isn't a practical ingredient in most homes. Solution granted!

Instant waffle mixes won't work with this method. They're mostly flour,& baking powder, then just add water or milk. There isn't enough fat to keep the waffle tender in the middle when you caramelize it. Make your batter from scratch. Belgian or regular is fine.

What's the difference between a Belgian waffle and a regular waffle? Belgian waffles are made with a yeast dough, while regular waffles, with a quick dough by using baking powder as a leavening. Belgian waffles knead in softened butter, while melted butter is tempered into egg yolks in a regular waffle recipe. Some argue that the size plays a huge part in the distinction, but it's really the technique. For the record, Belgian waffles did not originate in Belgium. 


Waffle Recipe: 

1 1/4 C All Purpose or Pastry Flour
1/2 tsp kosher salt
1 tbsp baking powder

3 egg yolks
1 1/8 C milk
1 stick of butter (melted)

3 egg whites
2 tbsp sugar

1. Sift dry ingredients together
2. In separate bowl, mix beaten egg yolks, milk, and butter
3. Combine liquid ingredients to dry ingredients
4. In separate bowl (do not use bowl where egg yolks were), whip egg whites until they form soft peaks. Add sugar until stiff peaks form.
5. Fold egg whites gently into the batter, a spatula full at a time. Do not stir, or egg whites will completely collapse!

Follow manufacture's instructions on your waffle iron. Once waffles are made, set aside to cool. We are going to sweeten them up!

1. Preheat oven to 350.
2. Make a simple syrup using equal parts sugar and water.
3. Let reduce in half. Baste waffles with simple syrup, and dust with granulated sugar lightly.
4. Bake for 5 minutes each side. They should be slightly caramelized to a nice amber color.

Mascarpone Beurre Blanc & Marsala Syrup: This was my take on butter and syrup.

Ingredients:
4 oz softened mascarpone cheese (at room temp)
1/4 cup confectioner's sugar
1/2 C half and half (or equal parts of milk and heavy whipping cream)
lemon zest
freshly grated nutmeg
1/8 tsp kosher salt
2 oz butter & 1 oz flour kneaded together (French culinary technique and term called "Beurre manie`)
About 2 TBS lemon juice

1.In a saucepan, on medium heat, warm half & half
2.Gradually add confectioner's sugar.
3. Whisk until completely combined and dissolved
4. Add nutmeg, lemon zest, and salt
5. Have mascarpone in a bowl, and gradually pour in mixture, while gently stirring.
6. Place back into clean saucepan, on low heat, and gently whisk.
7. Add lemon juice (it wont curdle as people assume)
8. Kill heat, and add in beurre manie` and continue whisking.
9. Strain sauce for an extra velvety texture.

What is beurre manie`? Its a technique used to finish and thicken sauces. Flour is kneaded into softened butter, and when added to a sauce, will release and dissolve, resulting into a glossy, consistent sauce, without clumping.

Marsala Syrup:
2 oz Marsala wine
2 oz apple juice (the real stuff in the produce section)
2 tbps (1 oz)  sugar
Orange zest (optional)

1. In a saucepan, heat Marsala wine and cook out alcohol.
2. Add remaining ingredients, and reduce.
3. Strain & set aside

How I plated this, was by adding a bit of the Mascarpone beurre (bur) blanc sauce at the bottom of a pasta bowl, and using a chop stick, dotted in the syrup, then in a circular motion, made little waves. Marsala is pretty strong, so you don't need a lot in this recipe. When making what seems like a rich dish, everything in moderation, and everything balanced. This is why we add lemon juice to our sauce, to cut the richness out of it. Serve with fresh berries, stone fruits, green apples, or firm pears. Enjoy!

Chilaquiles


I love Mexican food, and grew up eating it all of the time. Chilaquiles (chee la kee les) is a very simple, and popular dish. Great for not only lunch and dinner, but definitely breakfast too! It consists of cooking dried corn tortillas, salsa rojo, eggs, and anything else you'd like to add. It's sort of like a Mexican breakfast version of "Bubble and Squeek", or a kitchen sink dish. I wanted to clean it up a bit, adding the egg on top, and accompanying it with a Catalina bean puree, and homemade queso fresco rolled in cilantro. 

Add your own twist on it. At home, I add potatoes, beans, whatever it is I can find. sometimes cheese too! It doesn't have to be exactly like mine. I'm giving you my version of it, and my sauce recipe. Use what YOU like. Be creative. My recipes are guidelines for you to conduct your own creativity. Always remember that! 

I will have to save the queso fresco tutorial for another day, and will get around to it (very simple). For now, here is a recipe for chilaquiles: 

Ingredients: 
6 medium corn tortillas cut into strips (dried out over night)
salsa rojo (recipe below)
white onion
Kosher salt
Canola Oil
Fried egg (optional)

In a larger skillet, add a little oil, and cook diced onions until translucent, add tortilla strips, cook until slightly crispy (not like a chip) and finish with sauce. Adjust seasoning if needed. Set aside and let set up. The tortillas will absorb some of that amazing sauce. I use canola oil because it is neutral in flavor. Some prefer corn oil. Personally, I suggest canola! Corn oil tends to make dishes, especially corn dishes, taste heavy. If that makes any sense! 


Salsa Rojo:
6 Roma tomatoes (fresh)
3 cloves garlic 
Mexican oregano (to taste)
2 ancho chilies (soaked overnight)
1 Guajillo chile dried (soaked over night)
Kosher Salt to taste

For the salsa rojo, stew tomatoes, garlic until fork tender. Traditionally, stems, seeds, and all (no garlic husks) Blend in with soaked chiles, oregano, and lightly season. 
Strain, and in a saucepan on low heat, reduce. Adjust seasoning. Set aside. 


Catalina Bean Puree:
I prefer dried beans, they'll taste much better than canned, but use what you have, or what you'd like. If dried, soak over night. Change water, simmer for 3-4 hours per pound. Cool down. In a blender, puree beans, charred garlic (optional for Spanish influence), gently drizzle in olive oil to emulsify. Strain, reduce, adjust seasoning. You will be left with a very lovely, velvety puree. 

How to Properly Fry an Egg:
In order to avoid toasty eggs (if you like them toasty, go for it) use clarified butter. This is easy and necessary! Take a stick of butter, in a heat safe glass bowl, over a double boiler. Skim off milk solids. Strain if needed. You're left with the fat, which will increase your smoke point dramatically, which will prevent burning! Gently in a low heat, small non stick pan, add your egg. 

Remember, the fresher your egg, the less likely it will break when transferring, and the less likely the egg yolk will break when cracking open! 

Add with queso fresco gently rolled in minced cilantro (no stems guys) and of course, gently season your egg with a little Kosher salt. 

Pop open your egg, and mix with chilaquiles to make a lovely sauce. Yes, it is cooked, and safe. If you're uncomfortable with over easy eggs, by all means, cook to your preference!

You Create Your Own Destiny

Hey everyone!

I feel very inspired to post about my experiences with the Law of Attraction, and the realization that fate and luck have very little to do with pursuing your dreams. I've given myself the opportunity to make something out of myself. My dreams. Unfortunately I've had a lot of strained relationships with past friends because of this. I try to explain to these people, that this stuff can come easy if you believe it can, and live it.

I used to think, "Oh, it isn't meant to be. I wasn't born in a fabulous city, or from a rich family. I'll just rot here I guess unless a miracle happens." Well, that miracle didn't exactly happen as I had anticipated. I had to work at it, and came to the point where progression happens when you follow these key steps I'm about to share.

I don't have all of the answers, nor do I claim to.  I live each day and progress, and am a happy person. I wasn't always like that, but I'll tell you one thing is for sure, once you're happy, you grow tired of hearing the same story from your unhappy friends. I also grow tired of being accused of thinking I'm better than them because I don't have these big dramatic issues in my life anymore, or I'm apparently hiding them.

No, I'm actually content. I'm meeting my health, family, relationship, and financial goals. Here is how I do it:

1. I get inspired, and I jot it down.  I'm launching two different lines at the moment, both related to food, and have another huge project that is being conceptualized and drafted with my dear brother (we aren't related biologically, long story). Anytime I become inspired, I jot it in my phone, my note pad, my iPad, whatever I have near me, and later transfer it to the motherboard.

2. Visualize the final product and or goal. Can't do it yet? Okay, visualize what you have so far. Visualize yourself creating that masterpiece, or going to school for it. Whatever it is you want, create it in your mind.

3. Be Grateful. Change your Thinking. This doesn't mean be oblivious and pretend to be happy. This means, quit being stubborn. Who cares about who is right in an argument between your spouse. Is that going to give you a super reward? What about that jerk that cut you off on the expressway this morning? If you are that jerk, what long term gratification does it give you to be mean spirited to someone else? When my hubby and I start to get heated now, we both take a break and think about the things that make us happy about each other. TOUGH right? At first, yes it is. It will become second nature.

4. Live in the moment, not tunnel vision. We think about how we want to look, and how we want to live, and that's fine, but you have to love, and appreciate that which you have NOW. Your current situation is a result of your past. That's it. Quit complaining about how bad you have it. Trust me, people have it far worse than you. You are only stuck in your situation if you keep saying your stuck. Law of attraction. Keep saying your life sucks, that's what you're attracting.

5. Get your way like a princess, rule it like a queen. My brother gave me this advice. It's true. Handle your business gracefully. You don't need to waste energy in order to be appreciated. The universe will take you out of that situation. Like me. I gave the last restaurant 500% of my heart, time and work ethic. Nobody cared. Nobody appreciated how observant I was, or how I noticed that another cook's equipment wasn't regulating temperature properly. Guess what? I'm out of that place now. I left. Then I had an injury, and it took that injury for me to realize how good I have it, and channel my frustration into something great. I did. I'm doing it now.

6. Reflect. Every night, I think about, or text out on my notes 100 things I'm grateful for. I have heard so many people tell me "I can't find 100 things." Bullshit! You just take it for granted. Like your tv remote. If it goes missing, you realize how little you appreciated it. Iced water, creativity, your kids macaroni drawings, how funny slipping on a banana peel looks, or the smell of fresh peonies. SO much around us we take for granted. Enjoy doing this though. This is just my little thing. I do not have to struggle either to find stuff. My day influences my gratitude. Going out to dinner, you realize how freakin awesome tortillas are (they are pretty awesome).

7. Own it. I watched this documentary about a month ago, called The Secret. My hubby's boss/good friend recommended it to him. I can't believe how life changing it has been for us. Sincerely, it has. We've applied the principals to our lives though. Changing our ways of thinking. It's crazy. I am not blowing smoke up your asses. This isn't a quick fix, but it happens quickly. If you don't believe, hey, fine with me! It won't change my life! The way I see it is, what harm can it do if you could be happier, healthier, wealthier, and actually appreciate life, other than living in it mindlessly day in and day out?

Every day should be cherished like an adventure. Even if you are in routine at the moment. That doesn't mean you have to think as if you are in routine. Wear a different pair of pumps to the office, or buy your coffee from another place. Enjoy that new feeling. You will attract more of it. I swear it is true.

If you think "I want to have my own coffee house. I don't know how to start, or what to do."

No... just imagine having that coffee house. You'll come across the books, the info, the people, everything in order to make it happen. Things like that always happen and we hardly recognize it.

As logical of a person I am, I can't deny how there are some things, that just seem more than what we know. Just go for the ride. Let it work in your favor.

Tzatziki is easy! Don't miss this step!

Hey everyone! I love tzatziki. It's really simple, refreshing, and DUH, healthy. I have a quick recipe for you guys, and you can finish with any fresh, bright herb as you choose, to personalize it. I cut my cucumber into a small dice. This is personal preference. It makes for an easier to handle dip or spread in my opinion. Do what YOU like!

I was inspired to share this recipe do to seeing how many people forget this important step when sharing their recipe for tzatziki...
They forget to draw out moisture from the cucumber!

If you let your yummy tzatziki relax in the fridge, it will water down. Plus, the light amount of salt will season the cucumbers themselves. Remember, season lightly in layers. It takes about half an hour.

 Green tea happens to be something I'm really passionate about. I learned early on that they soggy little tea bag in my cup, or tossed to the side was natures remedy to healthy skin.
